Ingredients:

3 pieces thinly sliced deli ham or turkey

tomato slices

½ teaspoon fresh oregano, minced (optional)

¼ teaspoon fresh thyme, minced (optional)

¼ cup Eggbeaters or 2 egg whites, beaten slightly

Salt and Pepper to taste

2 tablespoons feta cheese

Directions:

1. Preheat broiler on oven, spray one ramekin or oven-proof bowl with non-stick cooking spray. In the bottom of the ramekin place the 3 pieces of ham or turkey and place the tomato halves over the top of the ham.

2. Sprinkle the minced oregano and thyme over the top of the tomatoes. Pour ¼ cup of egg whites or 2 egg whites that are slightly beaten over the top of the tomatoes and ham. Sprinkle the egg whites with salt and pepper.

3. Sprinkle the feta cheese over the top of the egg, and place the ramekin on a baking sheet. Place the baking sheet in the oven under the broiler for 2 to 4 minutes, removing when the still soft but not overly runny.

Serves 1
