Pan Seared Halibut With Caper Butter Sauce

Don McClellan of Cherokee Nation Entertainment has a recipe for Pan Seared Halibut With Caper Butter Sauce.

Ingredients:

Halibut, Fresh (8 oz. piece) 2 ea.

Flour, All Purpose as needed

Lemon, Fresh; juiced 1 ea.

Wine, white 1 oz.

Capers 1 tsp.

Butter, unsalted 2 tbsp.

Asparagus, grilled 10 pieces

Salt to taste

Pepper to taste

Method:

Pre-heat oven to 400 degrees.

Season Halibut with salt and pepper, and dust with AP flour.

Heat medium sauté pan on high heat. Add enough oil to cover bottom of pan.

Place halibut into sauté pan and brown fish on both sides (approx. 4 min. on each side). Place on oven proof pan and bake until cooked through (approx. 6-7 minutes)

In the same sauté pan that you cooked the fish in add lemon juice, capers, white wine bring to a boil and reduce slightly.

Reduce heat and add butter allow butter to melt and swirl in pan to allow all ingredients to incorporate.

Season asparagus and grill until tender.

Remove halibut from oven and serve over asparagus, top halibut with caper sauce and serve immediately.

Side Dishes: Rice Pilaf, Mashed Potatoes, Fried Shoestring Potatoes, Risotto, Baked Potato, Wild Rice
