Golden Sweet Potato Nuggets

2 teaspoons ground cumin

1 teaspoon chili powder

¼ teaspoon salt

½ garlic powder (optional)

1 tablespoon olive oil

1 ½ pounds sweet potato, cut into small pieces (nuggets)

Preheat oven to 425°F. Mix the cumin, chili powder, paprika, salt, garlic powder and olive oil in a sealable plastic bag. Add the sweet potatoes and seal the bag. Shake the bag to coat well. Spread on a lightly oiled baking sheet. Bake for 5 minutes. Turn the sweet potato pieces. Bake for 5 – 10 minutes longer or until tender. Serve warm.
