Caribbean Grilled Shrimp

Mango puree and jerk seasoning add a touch of the exotic to a tasty – and healthy – grilled shrimp recipe. Fire up that grill as the temperatures cool down.

Ingredients

Marinade

1 lb. 16 – 20 count Shrimp (peeled)

½ cup Olive Oil

2 Tbs. Old Bay Seasoning

1 Tbs. Lemon Juice

Sauce

½ cup Mango Puree

2 Tbs. Light Brown Sugar

½ tsp. Allspice

½ tsp. Ginger

2 Tbs. White Wine Vinegar

1 Tbs. Lime Juice

Seasoning

2 tsp. Jerk Seasoning

Supplies

Wood Skewers

One Gallon Ziplock® Bag

Preparation

Place peeled shrimp in Ziplock bag and add olive oil, Old Bay, and lemon juice. Marinate for two hours under

refrigeration.

Soak skewers in water for at least one hour before grilling.

Remove shrimp from the marinade and skewer.

In a medium]sized, nonreactive bowl, prepare the sauce by blending the mango puree, light brown sugar, allspice,

ginger, and white wine vinegar. Mix thoroughly!

Evenly sprinkle jerk seasoning on both sides of skewered shrimp before grilling.

Grill shrimp for two minutes and turn. Liberally brush mango sauce on grilled side of shrimp. Grill for two more

minutes, or until the internal temperature reaches at least 145° F. Brush mango sauce on just]grilled side. Enjoy!
