Baked Apples

  • 1/4 cup dried cranberries or raisins
  • 1/4 cup chopped walnuts
  • 1/4 cup brown sugar
  • 1/4 tsp cinnamon
  • 4 Granny Smith apples

Preheat oven to 350 degrees. In a small bowl, combine dried fruit, walnuts, sugar and cinnamon. Core each apple and place in a baking dish. Spoon one-fourth of the ingredients into each apple. Bake for 40 minutes or until apples are tender. Serve warm. Even better with a scoop of low-fat vanilla ice cream or frozen yogurt.
