1 cucumber, without skin, fresh, cut into chunks
4 fresh plum tomatoes, cut into chunks
4 oz romaine lettuce, torn into bite size pieces
1 oz reduced-fat feta crumbles
10 pitted olives
Tzatziki Dressing Ingredients:
½ cup non-fat plain or Greek yogurt
¼ cup fresh mint, chopped
3 tbsp fresh lemon juice
1 cucumber, seeded
Combine the seeded cucumber, yogurt, mint, and lemon juice in a blender or food processor. Blend and set aside.
Combine the romaine, cucumber, tomatoes, and feta crumbles in a bowl. Toss with the dressing. Garnish each serving with about 5 olives.
*One tablespoon dried mint can be substituted if fresh mint is not available.
