2 tbsp. olive oil
1 c. green pepper, diced
1 c. red or yellow onion, diced
1 lb. chicken tenders, cut into ½-inch pieces
2 cloves garlic, minced
1 tsp. chili powder
1 tsp. ground cumin
1 tsp. ground coriander
Dash of Cayenne pepper (optional)
1 (15 oz.) can black beans, rinsed and drained
½ c. salsa
• Soft Flour Tortillas
• Your Favorite Taco Toppings
In a large skillet, heat olive oil; sauté peppers and onions under tender. Add chicken, and sauté until no longer pink. Stir in garlic, seasonings, beans and salsa. Reduce heat, cover and cook for 10 minutes, stirring occasionally. Meanwhile, warm tortillas in microwave or oven. Spoon warm chicken mixture into tortillas. Top with your favorite taco toppings, such as shredded cheese, lettuce, diced tomato, avocado, onions, etc. Serve with sour cream and plenty of salsa. Enjoy!
Kitchen Kimberley's Tips:
Make a delicious flavored-sour cream by adding chopped cilantro, lime or lemon juice, lime or lemon zest, chives, garlic powder, and cayenne pepper to taste, to plain sour cream. Use your imagination, and get creative - the possibilities are endless! Play with this recipe, and simply add different ingredients until it tastes good to you! No measurements required!
For the chicken mixture, you can substitute dark red kidney beans or pinto beans if you like.

Need a great side dish? Make a quick and easy ‘Salsa Rice' by adding prepared salsa to cooked rice. Add as much or as little salsa as you like! Add some corn for extra flavor and color.
