French Toast With Berry Topping

Time to do some cooking in the kitchen and Six in the Morning welcomed Rachel Vincent from St. John Hospital in Owasso.

Ingredients:
2 cups fresh strawberries or frozen strawberries, thawed
1 cup fresh blueberries or frozen blueberries, thawed
¼ cup sugar
1 ½ tablespoons cornstarch
1 ½ tablespoons lemon juice
1/3 cup water
1 cup fat-free milk
¼ cup egg substitute or an egg white
1 box (1 ounce) sugar free pudding mix, white flavor of your choice
8 slices Texas Toast
Butter-flavored cooking spray
Powdered sugar (as desired for garnish)

Directions:
1. Mash berries and set aside.
2. In a saucepan, combine sugar, cornstarch and water until smooth. Bring to a boil. Cook and stir for 2 minutes or until thickened.
3. Stir in berries. Remove from heat. Stir in lemon juice. Set aside.
4. In a medium mixing bowl combine milk, egg and pudding mix until well blended.
5. Dip toast in pudding mixture coating both sides. Heat large pan or griddle, spray with cooking spray. Cook French toast for 2-4 minutes on each side or until golden brown.
6. Serve with fruit topping and dusted with powdered sugar.

Yield: 4 servings, 2 slices toast and 1/3 cup fruit mixture
