Crispy Onion Rings

Eat onion rings without the guilt with this healthy alternative to deep-fried onion rings and save up to 300 calories per serving.

Ingredients:
2 medium to large Vidalia onions
2 Tbsp extra hot Chinese mustard
1 tsp cayenne pepper
½ cup Egg Beaters with Yolk
3/4 cup plain dry bread crumbs
3 Tbsp Smart Balance Light, melted

Directions:
1. Preheat oven to 450 degrees F.
2. Slice onions 1/3 inch thick and set aside.
3. In a separate bowl, combine Egg Beaters, cayenne, and mustard.
4. In a small bowl, combine bread crumbs and melted margarine.
5. Spray a baking pan with non-stick cooking spray.
6. Dip each onion ring in egg mixture and then in bread crumb mixture.
7. Set onion rings on a baking pan and cook for 15 minutes or until golden brown.

Yield: 4 servings

Nutrition information per 2 piece serving: 173 calories, 7 gm protein, 22 gm carbohydrate, 5.5 gm fat, 1.6 gm saturated fat, 26 mg cholesterol, 398 mg sodium
