Too warm to cook?  Salads are an ideal summertime entree or side.  Dietitian Celia Harkey of Midwest Dairy Council visited with the News On 6 with a salad recipe as well as something for smoothie fans

Super Spinach Salad

Ingredients:
8 ounces packaged spinach leaves or try arugula, mixed wild greens or Romaine lettuce
1/4 cup (one ounce) shredded Swiss cheese
1/2 cup canned mandarin oranges
1/2 cup carrots (sliced or shredded)
1/2 cup broccoli flowerets
1/4 cup shredded red cabbage
Fat-free Balsamic vinaigrette

Prep Time: 10 minutes

Preparation:
Place spinach, shredded cheese, oranges and carrots in a plastic bowl with lid. Pack vinaigrette in separate small plastic container. When ready to eat, top salad with vinaigrette and serve with low-fat, whole wheat crackers or roll and a bunch of green or red grapes.


Fruity Splash Smoothie

Ingredients: 1 cup fat-free milk
5-7 large unsweetened frozen strawberries
1 medium ripe banana, cut into chunks
1 tablespoon honey
6 ounces of orange juice
Preparation:
Put all ingredients in a blender and blend until smooth. Pour in glasses.

If there is any leftover smoothie, pour it into small plastic cups, cover the top of the cups with plastic wrap, insert a stick in the middle and freeze. This makes great frozen fruit pops.

Substitution Idea: You can blend up your own favorite smoothie concoction. Just remember to use milk or yogurt to give you that cool, creamy base. Then add your own favorite ingredients.
