Seared Scallops In Miso Broth

Ingredients:

Stock...

green onion (1/4 cup, julienne) - 1 bunch

cilantro (1/4 cup julienne) - 1 bunch

8 cups stock

10 ginger coins

4 stalks lemon grass

5 tablespoons miso paste

1 tablespoon soy sauce

For the salad...

1/4 cup carrots, julienne

1/2 cup mung beans

1/4 cup fresh mint leaf

1 lb soba noodles (cooked)

1 1/2 cup spinach

1 lb scallops, sliced

2 tablespoons ginger, julienne

4 lime wedges

 

Directions:

To prepare the stock, simmer green onion, cilantro, stock, ginger coins, and lemon grass for 30 minutes

Strain and add miso paste and soy sauce

Combine carrots, beans, mint, noodles and ginger to make a salad

Cook noodles in salted boiling water (about 5 minutes)

Divide noodles in 4 seperate bowls

Top with spinach, salad and sliced scallops

Ladle stock over the noodles and scallops

Let rest for 3-5 minutes before serving

Garnish with lime wedges
