Ingredients:
1 10-inch flour tortilla
Olive oil, 1 tablespoon
1 small chicken breast
¼ cup asparagus, chopped
¼ cup scallions, chopped
3 shitake mushrooms, sliced
2 oz mozzarella cheese, sliced thin
¼ cup parmesan cheese, grated
1 ½ tsp. Spice Market's chefs favorite
1 ½ tsp. Spice Market's Italian bread dip seasoning
Directions:
Place tortilla on baking sheet and preheat oven to 350 degrees
Cut chicken breast in strips, add seasoning, mix together
Sauté chicken and seasonings in 1 tablespoon olive oil, let cook for approx. 4-5 minutes
Add asparagus, scallions and shitake mushrooms, cook 3-4 minutes
Place slices of mozzarella cheese on top of tortilla, spoon chicken mixture on top of mozzarella, then sprinkle on Parmesan cheese
Fold tortilla in half, brush lightly with olive oil and bake for 20 minutes, or until lightly brown.
Cut into wedges and serve with spinach or leafy green salad
