1 tsp. Canola oil 4-5 spinach leaves 3 eggs ½ C. spinach dip 2 oz. diced tomatoes 1 oz. Feta cheese 1 orange wheel 1 sprig parsley
Directions:
Saute spinach in an egg pan for a few seconds, add eggs. Make a standard omelette. After omelette is flipped, add spinach dip inside and allow to melt. Turn out onto plate, top with diced tomato, then feta, then chopped parsley (all in the center). Add garnish.
