1 T. olive oil 6 oz. Chix #2, sliced 1 tsp. (heaping) garlic, chopped ¼ C. dried tomatoes, ½" diced 1 oz. Pine Nuts
1 C. (packed) fresh spinach 6 fresh basil leaves 4 oz. chicken broth 2 oz. fettuccine sauce 2 oz. tomato basil sauce 10 oz. cooked penne pasta
1 oz. Feta cheese 2 oz. tomato, diced 1 oz. Feta cheese ½ tsp. parsley, chopped 1 sprig parsley
Directions:
Put oil in saute pan, add next 4 ingredients and saute 2 minutes. Add the next 6 ingredients and simmer until sauce has thickened and clings to the pasta. Remove from heat, stir in 1 oz. Feta cheese and pour into pasta bowl. Sprinkle with tomato, then Feta, then chopped parsley. Top with parsley sprig.
