2 T olive oil1/2 c onions, diced 3/4 c carrotes, diced 1/2 c leeks, diced 3/4 c potatoes, dieced 1/2 quart chicken stock 1/2 c cabbage, diced 3/4 c zucchini, diced 2 c stewed tomatoes, without juice 1 T Herbs de Provence 2 c Ott's Famous Dressing* (* You can substitute any of Ott's Famous Dressing with Reduced Calories or Fat Free for a leaner soup)
Directions:
Add oil and heat in saucepan. Sauté onions, carrots, and leeks until onions are clear. Add chicken stock, simmer 10 minutes. Add potatoes, simmer 10 more minutes. Add remaining ingredients, simmer 10 minutes. Season with salt and pepper if needed and serve.
