1 C. chopped strawberries2 kiwi, peeled and chopped ½ C. chopped cucumber ¼ C. chopped red onion 1 jalapeno, diced and seeded 1 T. chopped cilantro 2 T. lime juice Zest of a small lime 1 T. orange juice 2 T. sugar Butter-flavored cooking spray 1 ½ lb. orange roughy 2 small limes Salt and pepper to taste
Directions:
Preheat oven to 450 degrees F. Combine first 10 ingredients (strawberries, kiwi, cucumber, onion, jalapeno, cilantro, lime juice, lime zest, orange juice and sugar) in a medium mixing bowl. Cover and chill. Divide fish fillets evenly into 4 servings and place each serving on a 12-inch square of heavy-duty aluminum foil sprayed with cooking spray. Squeeze juice of ½ of small lime on each fish packet. Sprinkle with salt and pepper as desired. Seal foil packets and place on a baking sheet. Bake approximately 15-20 minutes or until fish flakes easily.
