1 medium onion, chopped 2 tbsp. olive oil 10 oz. pkg. frozen spinach, thawed and drained 6 eggs 1/2 lb. cooked ham, diced 3/4 cup Parmesan cheese, grated 2 garlic cloves, minced 1/2 tsp. dried basil 1/4 tsp. marjoram Salt and pepper, to taste 1 cup Mozzarella cheese, shredded 1/4 cup Parmesan cheese, grated
Directions:
Preheat oven to 350 degrees. Sauté onion in olive oil until translucent. Remove from heat. In a large bowl, combine the eggs, spinach, 3/4 cup Parmesan cheese, garlic, basil, marjoram, salt and pepper. Add the ham and cooked onion. Pour into an oven-safe skillet that has been sprayed with a cooking spray. Sprinkle with the Mozzarella cheese and add remaining 1/4 cup Parmesan cheese. Bake for 25 to 30 minutes or until mixture is set.
