Christmas Rice

Yield:
Serves 6 to 8
Ingredients:
1 cup long-grain rice
2 cans (10 1/2 oz. each) Condensed Chicken with Rice Soup, undiluted
1 1/4 c. water
1 tsp. salt
2 large green bell peppers, chopped
1 large onion, chopped
1/2 stick margarine, cut into pieces
1 small jar chopped pimientos, with liquid
4 oz. sliced mushrooms (fresh or canned)
Directions:
Preheat oven to 350 degrees.

In a large bowl, mix all ingredients together. Pour into buttered 2-quart casserole; stir several times. Bake, uncovered, for 45 minutes to 1 hour, stirring several times while cooking. Enjoy!
