1 small onion 2 tsp. butter 1 ½ C. frozen broccoli 1 ½ C. frozen corn 1 7 oz. can cream corn 1 T. cilantro 1 ½ C. chicken broth 2 vegetable bouillon cubes ½ C. dry instant mashed potato flakes 2 C. 2% lowfat milk ¼ tsp. pepper
Directions:
Chop onion. Melt butter in large saucepan over medium heat, add chopped onion and sauté 1 minute. Add broccoli, frozen and creamed corn, cilantro, broth and bouillon cubes. Cook over medium heat, stirring occasionally, for 10 minutes. Add instant mashed potatoes and milk. Cook about 5 minutes, stirring constantly so milk doesn't scorch. Stir in pepper. Adjust seasonings to taste.
