Andolini’s Fried Mozzarella slices

Making one of Andolini’s signature appetizers, fried mozzarella slices, without using pre-frozen cheese is a delicious way to punch up your at home cooking routine. 

You’ll need:

Fresh Mozzarella (look for fist sized balls of mozzarella at your grocery store - one for every 4 servings)

2 cups all purpose flour 

2 eggs

2 cups bread crumbs 

1 tsp onion powder

.5 tsp garlic powder

.5 tsp paprika

.25 tsp of oregano

pinch cayenne pepper

4 oz. marinara sauce (pick your favorite, heat it up to serve)

1 oz. pecorino Romano cheese, for sprinkling 

oil for frying

Heat the oil in your deep fryer, in a deep skillet, or set your air fryer to 350°. Use an oil designed for the frying. Slice your mozzarella into thick rounds — you should get 5 slices or so from each ball. In a mixing bowl, use a fork to thoroughly mix the all purpose flour with the spices. In another bowl, crack the two eggs and use a fork to mix to an even consistency. Put the bread crumbs into a third mixing bowl. Take your slices and coat them evenly in the flour mixture, then then egg mixture, and then the bread crumbs. Place on a plate and transfer carefully to fryer. Fry until golden brown, typically 2 to 3 minutes. Remove from fryer, arrange on a serving plate, and add warm marinara in small bowl. Sprinkle fried cheese and marinara with pecorino Romano cheese and serve.
