4 cups Rich chicken stock
2 tabl. Cornstarch
1 teas. Ginger, ground
1 teas. Garlic, minced
3 Eggs, lightly beaten
1 tabl. Toasted sesame oil
¼ cup Scallions, thinly sliced, plus extra for garnish
1½ cups Smoked chicken breast, shredded
Sea salt and black pepper, to taste
Wontons, julienne & crispy fried
Pour chicken stock in stock pot with ginger, cornstarch & garlic; bring to a rapid boil stirring until cornstarch starts to thicken broth. While stirring broth drizzle in beaten eggs with a whisk. Add shredded smoked chicken, sesame oil & scallions; ladle into large bowl and top with crispy fried wontons & additional scallions.
