Panera Bread's Erin Barnhart has a tasty recipe for broccoli cheddar chicken and rice.
·2 cups pre-cooked rice
·8 oz. shredded rotisserie chicken
·2 cups frozen broccoli florets, thawed
·16 oz. Panera® Broccoli Cheddar Soup
·2/3 cup cheddar cheese, shredded
1. Preheat the oven to 400°F. Spread the cooked rice in bottom of a 2 ½ quart baking dish. Layer chicken evenly over rice and top with broccoli, soup, and cheese.
2. Bake for 20 – 25 minutes or until heated through and golden brown on top.

·Thaw frozen broccoli in the microwave 1-2 minutes and drain excess water. Or find fresh florets in a microwaveable steam bag in the produce section and cook according to package instructions.
