BOK Center And Cox Business Center Executive Chef Devin Levine joined us in the Cooking Corner for his Spicy Salmon Poke recipe.
Ingredients
8 oz Fresh Salmon, diced
1/4 tsp Ginger, fresh grated
1/2 cup Mango, diced
1/2 ea Red bell pepper
1/2 ea Yellow bell pepper
1 tabl Scallion
Marinade:
1 tabl Rice wine vinegar
2 tbsp Soy sauce
1 tsp Sriracha
2 tabl Scallions, minced
1 tsp Sesame seeds, toasted
1 tsp Sesame oil
1 tabl Cilantro, chopped
Mix all ingredients together and allow to marinate for 20 minutes
Garnish Thinly sliced English cucumber
Scallions, chopped
Asian rice seasoning blend
Portion salmon poke into cups and garnish with scallions & rice seasoning, chill until served. Serve with crispy fried wontons.
