Oklahoma Joe’s BBQ Turkey Breast

Welcome to the Cooking Corner! Joe Davidson of Oklahoma Joe's Barbecue joined us for this week and he shows us how to make his smoked turkey breast!

Ingredients:

2 Boneless Turkey Breast Halves

Bottle of Original BBQ Rub

Bottle of Oklahoma Joe’s Original BBQ Sauce

Aluminum Foil

Mesquite Wood Chips

Directions:

· Preheat grill to 275 degrees using charcoal plus mesquite or hickory chunks on your Oklahoma Joe Smoker or fire up your Oklahoma Joe Pellet Grill to 275.

· Use foil to make a smoke bomb by placing wood chips in the foil and wad it up into a ball. If using the gas side of your grill place smoke bomb on burners for smoke flavor on your gas grill otherwise place directly on the hot coals. You will be cooking the Turkey Breast partially with indirect heat so build your fire to one side of the grill.

· Apply a good coating of Original BBQ Rub liberally to all sides of the tenderloins. Pro Tip- Spray the Turkey with Duck Fat before applying the rub

· Place Turkey on the grill directly over the fire

· Flip the turkey every 5 or so minutes as needed to avoid burning one side or the other

· Continue searing for approximately 15 minutes until you see good sear marks on both sides.

· Remove turkey from grill, apply a coating of Original or Hot BBQ Sauce to the turkey

· Wrap turkey in aluminum foil and continue cooking with indirect heat (away from the fire) for approximately 30 additional minutes or until tenderloins reach an internal meat temperature of 160 degrees (don’t go over 160 or risk drying out)

· Remove from grill.

· Slice and serve with Warm BBQ Sauce and your favorite sides.
