Montereau Executive Chef Joseph Fistrovich show us how to make a Watermelon Panzanella Salad.

Ingredients:

  1. 1 cup Watermelon, Large Dice
  2. ½ cup Toasted Croutons
  3. ¼ cup Feta Cheese, Crumbled
  4. ½ cup Arugula
  5. ¼ cup Red Onion, Sliced Thin
  6. 3 T. Red Wine Vinegar
  7. ¼ cup Extra Virgin Olive Oil
  8. Salt & Pepper to taste

Directions:

In large mixing bowl combine watermelon, croutons, feta cheese, and arugula. Drizzle with vinegar and oil, and gently toss until coated. Season with salt and pepper.
