2 bags of cheese tortellini
1 cup of halved cherry tomatoes
1/2 cup black olives (sliced)
1/2 cup finely diced English Cucumber
4 ounces fresh mozzarella cheese, cut into cubes
2 Tablespoon red wine vinegar
1 1/2 teaspoons Italian seasoning
3 Tablespoons of olive oil
1 1/4 pounds skirt steak
Bring a large pot of salted water to a boil. Add the tortellini and cook as directed on the bag. Drain and set aside.
Combine tomatoes, olives, cucumbers, and mozzarella cheese in a large bowl. Add the red wine vinegar, Italian seasoning, and 2 Tablespoons olive oil and toss well.
Season the steak generously with Salt and pepper and place 1 tablespoon olive oil in skillet. Heat the oil and add steak and cook to well browned, approximately 5 minutes for medium rare. Let it rest for about 5 minutes. Slice the steak.
Mix pasta with the tomato mixture and toss till coated. Place sliced steak on top of the salad.
