Carolyn Piguet from Piguet's Prime Time is back to show us how to make pumpkin pie bread pudding with cream cheese frosting.
Pumpkin Pie Bread Pudding
1 loaf of Brioche Bread – torn in cubes
1 can of Pumpkin Pie Mix
2 eggs
2 cups of heavy cream
½ cup of sugar
2 tsp. vanilla
2 tsp. butter, melted
2 tsp. cinnamon sugar to go on top of dish
Turn oven on to 350 degrees.
Tear brioche into cubes and set aside.
Butter 9 x 13 in. pan. Beat eggs and add cream. Mix well. Add sugar and mix again. Add vanilla, butter and pumpkin pie mix and mix thoroughly. Place bread cubes in the bowl with pumpkin mixture and make sure all bread cubes are saturated with pumpkin custard mixture. Sprinkle cinnamon sugar mixture on top of pudding.Pour mixture in the 9 x 13 in. and bake for 1 hour until top browns and pudding is set. Frost with cream cheese frosting.
Cream Cheese Frosting
4 ounces of cream cheese softened.
1 cup of powdered sugar
½ cup heavy cream
1 tsp. of vanilla
Place cream cheese in a mixing bowl and cream. Add powdered sugar and slowly add cream to desired consistency. Add vanilla and spread on hot bread pudding.
Pudding can be served warm or cold. It can be served as a dessert or breakfast dish.
