We're well into October which means Halloween is on everyone's mind right now.

Our friend Carolyn Piguet with Piguet's Prime Time joins us in the Air Comfort Solutions Kitchen with a healthy stuffed-bell pepper recipe, with a bit of a spooky twist.

Jack-o-lantern Stuffed Bell Peppers

Serves 6

6 orange bell peppers

1 1/2 lbs of ground beef

1 onion, diced

1 egg

1 cup milk

1 cup Italian bread crumbs

Sauce

2 Tbsp. mustard

1/2 cup ketchup

2 Tbsp. Brown Sugar

Choice 6 nicely shaped orange bell peppers and cut the tops off to look like the top of a jack-o-lantern. Scoop out the seeds, cut in some triangles in the sides to look like jack-o-lantern eyes and mouth. Place peppers in boiling water for about 5 minutes to help soften and partially blanch peppers.

Prepare a mixture of ground beef, dried bread crumbs, onion, egg and milk. Stuff the mixture in the pepper, leaving about 1/2 inch from the top to place the sauce of ketchup, mustard, and brown sugar.

Place the cap back on pepper and bake for 45 minutes, uncovered at 350 degrees.
