Ingredients:
Red Wine Vinaigrette
¼ c red wine vinegar
1 tsp kosher salt
¼ tsp black pepper
½ c Olive Oil
Salad
1 small cucumber, peeled, seeded and cubed
½ small red onion, thinly sliced
3 tomatoes cut into bite-sized cubes
3 ½ c bite-sized watermelon cubes, seedless and chilled
1 red bell pepper, diced
2 avocados, cubed
7 oz feta cheese, cubed
1 cup mint, thinly sliced
Directions:
For the vinaigrette, whisk the vinegar, salt and pepper to blend. Gradually whisk in the oil to blend well. Can be made a week ahead and stored in an airtight container in the fridge.
To make the salad, combine salad ingredients and top with vinaigrette. Serve immediately.
