Angel Hair Pasta Nests “Pomodoro”

Ingredients:

  1. 1# Angel hair Pasta, cooked, cooled & drained completely
  2. ¼ cup Fresh Basil Pesto
  3. ¼ cup Olive Oil
  4. 1 tbsp. Fresh Garlic, minced
  5. ½ cup Fresh Grated Parmesan
  6. Salt & Pepper to taste

Salad:

  • 1 pt. Cherry Tomatoes, halved
  • 1 tbsp. Fresh Pesto
  • 2 tbsp. Balsamic Vinegar
  • 2 cups Baby Greens or Arugula
  • Fresh Grated Parmesan
  • Salt & Pepper to taste

Directions:

  1. Warm non-stick skillet over medium heat; toss all ingredients together and form into nests. 
  2. Coat skillet with additional olive oil, drop nests in medium size piles and press lightly; lightly saute until golden brown on each side. 
  3. Place nests on presentation plate and top with cherry tomato salad and garnish with additional grated parmesan.
