Chalkboard Crab Cakes

Ingredients:

  • 1 ½ cup mayo
  • 12 Scallions (thinly sliced)
  • 6 Eggs
  • 3 tbs Dijon Mustard
  • 2 oz Lemon Juice
  • 2 tbs Old Bay seasoning
  • 3 jalapenos (Seeded & small diced)
  • 1 cup Chives (Small Diced
  • 2 tbs Salt
  • 2 tbs pepper
  • 6 lbs lump crab meat
  • 1 ½ cup Panko bread crumbs

Instructions:

  1. Mix first seven ingredients.
  2. Mix in crab
  3. Fold in salt, pepper, panko 7 Chives.
  4. Portion in 2oz each
  5. Roll in Panko
  6. Place in buttered skillet and sear for 2 minutes on each side

Makes 50 – 2 oz. crab cakes
