8 oz whole wheat bow tie pasta
½ cup grated Asiago cheese, extra for garnish
½ cup Panera® Caesar Dressing
3 cups diced yellow squash and zucchini, mixed
2 packed cups fresh baby spinach
16 oz package grape tomatoes, halved
Kosher salt and freshly ground black pepper, to taste
1. Cook pasta according to package directions and drain.
2. In large bowl, toss pasta with cheese and ¼ cup dressing. Add squash, spinach, and tomatoes and gently toss to combine.
3. Using a fine grater, zest lemon-half and juice over salad, and toss. Add salt and pepper to taste.
4. Chill for at least 30 minutes or until ready to serve. Before serving, toss with remaining ¼ cup dressing.
