Sirloin Alla Chianti

Pan seared sirloin over mushroom risotto, zucchini, sundried tomatoes with a red wine reduction. 


3 cups chicken stock

1 tsp of garlic minced 

1 8oz - 10 oz sirloin

1 cup rice ( risotto)

5oz sliced mushrooms

2oz sundried tomatoes

third cup od heavy cream

.5 oz white wine

third cup fresh parmesan

2oz olive oil

steak seasoning

salt n pepper to taste

2 oz unsalted butter


Prep steak by rubbing a healthy portion of seasoning on it and set aside. begin by simmering the garlic in chicken stock. wash rice off then put in sauce pot and stir until water has almost boiled out then  add wine and cream. once hot add parmesan to thicken up rice and cream.heat olive oil, once olive oil is hot gently place steak in the pan creating a nice brown sear. once steak is to temp Deglaze with red wine and add butter for sauce.
