Ingredients:
1 each fresh cucumber
1 each ripe avocado
2 each ripe multi colored heirloom tomatoes
1 cup fresh squeezed lemon juice
1 tbsp of your favorite hot sauce
1 tbsp pickled shallots ( 3,2,1 pickling liquid. IE 3 cups of boiling water, 2 cups of white wine vinegar, 1 cup granulated sugar.)
2-3 sprigs of fresh cilantro.
Kosher salt or sea salt to taste aprox 1/2 tsp Fresh ground black pepper to taste aprox 1/8 tsp
Method:
Peel and slice cucumbers about a quarter if an inch think and place them first on to a plate.
Slice ripe heirloom tomatoes 1/4 in thick and place onto the plate.
Peel and slice the cucumber 1/4 inch think and place on top of the tomatoes. At this point season both the tomatoes and cucumbers with salt and pepper.
Large dice the fresh avocado and place on top of the cucumbers, again seasoning with salt and pepper.
Sprinkle the pickled shallots on top of the fresh salad and them drizzle about 1/8th of a cup of dressing on to the entire salad.
Place the cilantro leaves on top of the shallots
