Lamb Chops with Mint Yogurt Sauce
INGREDIENTS:
8 lamb chops
1 tbsp butter
1/2 cup fresh mint
1/2 cup fresh cilantro
1 clove garlic
1 slice mango
1 tbsp lime juice
1/2 cup of plain yogurt
Salt / Pepper
DIRECTIONS:
1. Make the mint yogurt sauce by blending the mint, cilantro, garlic, mango, lime juice, yogurt and salt until smooth.
2. Season Lamb Chops with salt and pepper. Sauté the lamb chops in the butter until cooked to taste. Serve with the mint yogurt sauce.
Creamy Spring Pea Salad
INGREDIENTS:
3 lb pag Frozen Peas
1 lb Bacon, diced
1 large Yellow Onion, sliced
2 T All Purpose Flour
¼ C Heavy Cream
1 C Chicken Stock
½ C Parmesan Cheese, grated
2 T Dried Basil
2 T Parsley, chopped
Zest of 1 Lemon
Salt / Pepper
DIRECTIONS:
1. In large sauté pan, on medium heat, cook bacon pieces about halfway. Add sliced onions and cook until onions are tender. Remove mixture from pan and set aside.
2. Add flour to bacon fat and begin to make a roux. Whisk to remove any lumps. Add cream and chicken stock and whisk until all ingredients are combined.
3. Add peas, bacon and onions to cream sauce. Season with Salt, Pepper, Basil, Parsley, Lemon Zest and Parmesan Cheese.
4. Cook on low until all ingredients are mixed and peas are cooked through.
5. Adjust seasoning to taste and serve.
