1 Ataulfo mango, finely diced
1/3 cup chopped fresh cilantro
¾ cup finely diced cucumber (remove seeds if they are large)
¼ cup diced red onion
1 jalapeño pepper, minced
Zest and juice of ½ lime, or to taste
Combine all ingredients in a medium bowl and toss to combine.
Makes 2 cups, about 6 servings.
