Beef and Blue Salad

12oz. New York Strip seasoned with salt and pepper and garlic

Broil or pan fry strip steak until desired doneness (2 min. each side for med. rare)

1/4c. chopped dates

4 slices bacon-cooked and chopped

¼ c. Bleu Cheese crumbles

¼ c. Toasted walnuts

1 head romaine, chopped

Dressing:

¼ c. Olive oil

¼ c. Orange juice

1/8 c. Apple Cider Vinegar

3 T Brown sugar

1 t Dijon mustard

1 pinch each salt/pepper/garlic powder

Whisk all ingredients excluding oil until sugar is dissolved, then slowly add oil

To assemble

Slice steak into ½ inch slices. In large bowl, mix romaine, bleu cheese, walnuts, bacon and dates. Add dressing and toss. Divide dressed salad between two plates. Divide steak strips on each plate and serve. Makes 2 servigs
