Bacon Jalapeno Swiss Cheese

4 oz White wine base

2 tsp Garlic, chopped

2 tsp Shallots, diced

2 oz Bacon pieces

3 tsp Jalapeno, diced

6 oz Swiss/Gruyere cheese Blend

7 turns Black pepper

Note: Flouring Procedure: 5 oz fl our per 5 lbs of cheese; 6 oz portions


Step Procedure

1 Add 4 oz of white wine base to the liner.

2 Place fork inside the liner.

3 Add garlic, shallots, bacon pieces and jalapeno to the liner and stir for about 30 seconds.

4 Add 1/3 of the cheese blend, mix thoroughly using cheese fork.

5 Add an additional 1/3 of the cheese and mix thoroughly.

6 Add remaining 1/3 of cheese and mix thoroughly until all the cheese is melted and incorporated.

7 Use a whipping motion to fluff up the cheese.

8 Add 7 turns of fresh ground black pepper and stir to incorporate.

9 Remove fork from liner (do not scrape against liner) and place fork across tongs.
