Ingredients
1 pound beef strips, 1/8 to 1/4 inch thick
2 packages Ramen noodles
10 ounces (2 package) fresh spinach, stems removed, thinly sliced
1 head of Bok Choy, cleaned and thinly sliced
8 ounces (1 can) sliced water chestnuts, drained
1/4 cup sliced green onions
Marinade:
1 tablespoons chili powder
1/4 cup hoisin sauce
2 tablespoons reduced-sodium soy sauce
1 tablespoon water
2 teaspoons dark sesame oil
2 large cloves garlic, minced
1/4 teaspoon crushed red pepper
Instructions
Stack beef steaks; cut lengthwise in half and then crosswise into 1-inch wide strips. Combine marinade ingredients; add beef, tossing to coat. Cover and marinate in refrigerator 10 minutes.
Remove beef from marinade; reserve marinade. Heat large nonstick wok or skillet over medium-high heat until hot. Add beef (1/2 at a time) and stir-fry 1 to 2 minutes or until outside surface is no longer pink. (Do not overcook.) Remove from skillet with slotted spoon; keep warm.
Crumble Ramen noodles while in package so that they break into small pieces.
In the same skillet, combine noodles, spinach, Bok Choy, water chestnuts, green onions and reserved marinade; cook until spinach and Bok Choy is wilted and mixture is heated through, stirring occasionally. Return beef to skillet; mix lightly.
Beef and spinach make a perfect combination in this one-dish main course. The two foods complement each other so that maximum nutrition is achieved. It is also quick and easy since it can be prepared in about 15 minutes. This quick meal is packed with iron, vitamin C and anti-oxidants. You may add other favorite vegetables to this stir fry.
Bok Choy can be used as cabbage in any recipe. Cabbage has been found to have benefits that promote digestive tract health and cardiovascular health. Not only is this tasty dish easy to prepare, it is easy to eat and good for you, too.
