Crustless Quiche for Easter Brunch

Ingredients:

  • ¾ cup Egg Beaters
  • 1 (4 oz.) can chopped green chilies
  • ¾  cup finely chopped Canadian bacon (or lean ham)
  • 1 ¾  cups skim milk
  • 1 cup chopped Fresh Spinach
  • ¾  cup shredded reduced-fat Cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 1 teaspoon finely chopped onion
  • pinch cayenne pepper

Directions:

Preheat oven to 350°F.

In a saucepan, scald the skim milk (bring it nearly to a boil).

When tiny bubbles begin to form around the edge, remove from heat and add the cheese.

Stir until cheese melts, then add salt, paprika, onion and pepper. Beat in eggs, one at a time.

Stir in green chilies (or jalapenos), spinach, and Canadian bacon.  

Bake for about 45 minutes or until set.
