Cheesecake-Filled Chocolate-Covered Strawberries

Chef Garrett McKeeman, Executive Chef at the Cherokee Casino West Siloam Springs, has a recipe for Cheesecake-Filled Chocolate Covered Strawberries.

Ingredients:

1 – 8oz package Ghirardelli Semi-sweet Baking Chocolate or Bakers Brand Semi-sweet blocks

1 – Box Jell-o Brand No-Bake Cheesecake

2 - Pints Strawberries

Tools:

1 – Box Ziploc Bags

1 – Paring knife

1 – Pair of scissors

2 – one bowl for melting chocolate one for preparing cheesecake

1 - Rubber Spatula

Directions:

1. Wash and dry Strawberries

2. Prepare no bake cheesecake as directed and then place into zip lock bag

3. Cut tips of strawberries and using paring knife create cavity inside strawberry

4. Cut corner of Ziploc to form a make-shift piping bag and pipe cheesecake filling into strawberry until full

5. Dip straw berries ¾ of the way into chocolate making sure to leave a small amount or red and the leaved un-dipped

6. Place strawberries on wax or parchment paper and allow to dry

*Tips for the perfect dip

After you dip every few strawberries go back and push the strawberries forward on the paper, this prevents chocolate "feet" and allows for a perfect finished product
