Pork Ingredients:
- 8 lb. Pork Shoulder
- 3 Tbs. Pork Seasoning
- 4 Tbs. Yellow Mustard
Utensils
- Knife
- Cutting Board
- Air Tight Container
Prep:
1. Trim excess fat away from outside layer of shoulder.
2. Slather entire outside of pork with yellow mustard.
3. Coat outside of pork with pork seasoning.
4. Place in air tight container for 24 hours.
Cooking:
1. Place shoulder on a 225° F. smoker.
2. Smoke for 12 hours or until internal temperature reaches 190º F.
3. Remove from smoker and rest for 30 minutes.
4. Shred pork and place aside.
Pork Sauce Ingredients:
- 1 Tbs. Yellow Mustard
- 2 Cups Sweet BBQ Sauce
- 1/2 Cup Honey
Utensils
- Non reactive bowl
- Whisk
- Rubber Spatula
Prep
1. Pour yellow mustard, sweet BBQ sauce, and honey into non reactive bowl.
2. Mix thoroughly.
3. Set aside.
Taco Dressing Ingredients
- 1 Cup Spicy BBQ Sauce
- 1 Cup Sour Cream
Utensils
- Non reactive bowl
- Whisk
- Rubber Spatula
Prep
1. Pour spicy BBQ sauce and sour cream into non reactive bowl.
2. Mix thoroughly.
3. Set aside.
Pork Tacos Ingredients
- Shredded Pork
- Pork Sauce
- 12-6" Flour Tortillas
- Shredded Iceberg Lettuce
- Diced Red Onion
- Taco Dressing
Utensils
- Large Skillet
- Metal Spatula
- Tongs
Prep
1. Place skillet on hot grill. Place shredded pork into hot pan.
2. Pour pork sauce over pork and mix and heat thoroughly.
3. Place flour tortillas directly on grill to heat.
4. Portion sauced pork onto tortillas evenly.
5. Top with lettuce, red onion, and taco dressing.
6. Enjoy.
