Chicken Taco Pizza
1 whole wheat pizza crust
½ cup picante sauce
2 cups part-skim mozzarella cheese, shredded
1 cup no-salt-added black beans, rinsed and drained
1 cup frozen yellow corn, thawed
1 boneless, skinless chicken breast, grilled
¼ cup chopped cilantro
Preheat oven to 425 degrees. Arrange crust on pizza stone or large baking sheet. Spread salsa over crust. Spread beans, corn, and chicken over salsa and top with cheese. Bake until crust is crisp and cheese is bubbly, about 20 minutes. Sprinkle with cilantro and enjoy! Serve with more salsa on the side if desired.
Chicken Pesto Pizza
1 whole wheat pizza crust
½ cup pesto of choice (Basil or Sun-Dried Tomato work well)
1 ½ cup mushrooms, diced
1 cup feta cheese
½ cup part-skim mozzarella cheese, shredded
1 boneless, skinless chicken breast grilled
Preheat oven to 425 degrees. Arrange crust on pizza stone or large baking sheet. Spread pesto over crust. Spread mushrooms and chicken over pesto and then sprinkle both cheeses over top. Bake until crust is crisp and cheese is melted, about 20 minutes.
