McNellie's Cottage Pie

2 TBS extra virgin olive oil
1 onion, coarsely chopped
1 cup diced carrots
1 cup diced celery
2 tsp minced garlic
½ cup red wine
3 bay leaves
1 cup beef broth
3 TBS HP sauce
1 1/2 lbs chipped beef or ground beef
1 cup leftover mashed potatoes
¼ cup shredded cheddar/Monterey Jack cheese

In a large sauce pan, brown beef. Then add onions, garlic, carrots & celery and sauté until onions are transparent. Add broth, red wine bay leaves & HP sauce. And cook on medium heat until sauce reduces. Place in an oven proof dish (either individual cups, or medium casserole dish). Spread mashed potatoes on top & sprinkle cheese. Place in 350 degree oven & bake for 15-20 minutes or until potatoes are golden brown & cheese is melted.
