Avocado Shrimp Salsa

- 1 lb. cooked, small shrimp, peeled and chopped
- 2 medium tomatoes, seeded and chopped
- 2 medium ripe avocados
- 1 cup fresh cilantro, minced
- 1 medium sweet red pepper, chopped
- ¾ cup thinly sliced green onion
- ½ cup cucumber, seeded and peeled
- 3 Tbs. lime juice
- 1 jalapeno pepper, seeded and chopped
- 1 tsp. salt
- ¼ tsp. pepper
- Tortilla chips
In large bowl combine the first 11 ingredients. Serve immediately with tortilla chips.
Yield: 6 cups
