Avocado Shrimp Salsa

  • 1 lb. cooked, small shrimp, peeled and chopped
  • 2 medium tomatoes, seeded and chopped
  • 2 medium ripe avocados
  • 1 cup fresh cilantro, minced
  • 1 medium sweet red pepper, chopped
  • ¾ cup thinly sliced green onion
  • ½ cup cucumber, seeded and peeled
  • 3 Tbs. lime juice
  • 1 jalapeno pepper, seeded and chopped
  • 1 tsp. salt
  • ¼ tsp. pepper
  • Tortilla chips

In large bowl combine the first 11 ingredients. Serve immediately with tortilla chips.

Yield: 6 cups
