Creamy Cucumber Soup

2 cucumbers, peeled, seeded and coarsely chopped

1 green onion, chopped

1 tbsp. fresh lemon juice

1 c. half and half

1 (16 oz.) container sour cream

1 tbsp. minced fresh dill or 1 tsp. dried dillweed

½ tsp. salt

¼ tsp. ground white pepper

Dash of hot sauce

Garnish:  Fresh Dill Sprigs or thinly sliced cucumber (optional)

In a food processor or blender, process cucumber, green onion and lemon juice for 2 minutes, or until smooth, stopping once to scrape down sides.  Transfer pureed mixture to a serving bowl; gently stir in half-and-half and next 5 ingredients.  Cover and chill.  Stir before serving; garnish, if desired, with fresh dill sprigs or cucumber slices.  Enjoy! 

Yield:  4 ½ cups
