White Chili

1 lb. chicken breast, cut into cubes
2 cans low sodium chicken broth
1 onion chopped
2 cans navy beans
1 can corn
1 small can green chiles
Reduced-fat shredded mozzarella cheese (optional)
Serves 4-6
Start by taking the cubed chicken and chopped onion and browning until chicken is no longer pink and/or until onions are translucent. Combine all ingredients in a pot and let simmer on the stove top for 15 minutes. Put chili in individual bowls and sprinkle with cheese if desired.
