2 cups all-purpose flour
2 cups granulated sugar
2 tsp baking powder
2 tsp ground cinnamon
2 tsp vanilla
1 1/4 cup canola oil
3 large eggs
2 cups shredded carrots
1 20 oz can crushed pineapple, drained
2 cups chopped walnuts
1 tsp fresh ginger, minced
1 tsp baking soda
1 tsp salt
Bake at 350 in 2- 8" round cake pans for ~1 hour
Frosting:
2 lbs cream cheese, softened
1/2 lb unsalted butter, softened
1/4 cup sour cream
2 tsp vanilla
5 cups confectioner's sugar
Mix all ingredients well. Frost cooled cake and enjoy!
