Apple Pecan Bread Pudding

Ingredients:
4 slices firm-textured bread
2 teaspoons margarine, melted
2 medium apples, chopped
1/4 cup chopped pecans
2 cups cold 2% low-fat milk
½ cup egg substitute
1 teaspoon vanilla
1 package (4-serving size) fat-free, sugar-free vanilla pudding mix
1 teaspoon ground cinnamon, divided use

Directions:
1. Heat oven to 350 degrees. Spray and -8 x -8 inch baking dish with non-stick cooking spray and set aside.
2. Lightly brush bread with margarine; cut into ½-inch cubes. Place on cookie sheet. Bake 10 minutes or until lightly toasted.
3. Place toasted cubes in baking dish. Add apples and pecans.
4. In a medium bowl, whisk together milk, egg substitute and vanilla until well blended. Add pudding mix and ½ teaspoon cinnamon; blend well. Pour over bread mixture; sprinkle with remaining cinnamon.
5. Bake 30-40 minutes. Remove from oven; let stand 10 minutes before serving.

Yield: 8 servings
