Canadian Bacon Breakfast Squares

<FONT size=2>Time to do some cooking in the kitchen, and Six in the Morning joined Jennifer Parham from St. John Medical Center with a recipe for Canadian Bacon Breakfast Squares. This is a delicious dish to set your kids off to school with some protein. Add a side serving of fruit to compliment the meal.</FONT>

Ingredients:
Butter-flavored cooking spray
2 cups reduced fat baking mix
1/2 cup egg substitute
1 ½ cup low-fat buttermilk
1 package (6 ounces) Canadian bacon, cut into small triangles
1 cup shredded 2% reduced-fat sharp cheddar cheese
2 tablespoons parsley, chopped
4 green onions, diced

Directions:
1. Preheat oven to 350 degrees. Spray 8-inch square pan with butter flavored cooking spray.
2. In a medium bowl, stir together baking mix, egg substitute, and buttermilk until blended; stir in remaining ingredients. Spread into pan.
3. Spray top with butter flavored cooking spray.
4. Bake for 25-30 minutes. Cool in pan before cutting.

Yield: 12 servings

Nutrition information per serving: 151 calories, 22g carbohydrate, 9g protein, 2.6g fat, 1.5g saturated fat, 12mg cholesterol, 0.8g dietary fiber, 670mg sodium
